Description

A creamy and flavorful White Garlic Pizza Sauce recipe that elevates your homemade or store-bought pizza dough to a delicious new level. This sauce combines a buttery roux base, garlic, and Parmesan cheese to create a rich topping, complemented by mozzarella and fresh basil for a perfect white pizza experience.

Ingredients

Scale

For the Garlic Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1¼ cups whole milk
  • 3 cloves garlic, finely minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • ¼ cup finely shredded Parmesan cheese

For the Pizza Assembly

  • 1 pre-made or homemade pizza dough
  • ½ cup of prepared garlic sauce
  • 8 oz low-moisture mozzarella, freshly grated
  • ¼ cup Parmesan, freshly shredded
  • ½ teaspoon Italian herb mix
  • 1 teaspoon olive oil (for brushing)
  • 2 tablespoons fresh basil, thinly sliced

Instructions

  1. Prepare the Garlic Sauce: In a small pot, melt the unsalted butter over medium heat. Add the all-purpose flour and whisk constantly for 2 minutes to form a smooth roux, ensuring it does not brown.
  2. Make the Sauce Base: Slowly pour in the whole milk while whisking continuously to prevent lumps. Continue stirring the mixture for 3 to 5 minutes until the sauce thickens and begins to bubble lightly.
  3. Add Flavorings: Stir in the finely minced garlic, sea salt, and freshly cracked black pepper. Remove the pot from heat and mix in the finely shredded Parmesan cheese until it melts completely and the sauce becomes smooth. Allow the sauce to cool slightly.
  4. Prepare the Oven and Dough: Preheat the oven to 450°F (232°C). Roll out your pre-made or homemade pizza dough on a baking surface. Brush the dough evenly with olive oil and sprinkle the Italian herb mix over the top.
  5. Assemble the Pizza: Spread a thin and even layer of the prepared garlic sauce over the dough. Top with freshly grated low-moisture mozzarella cheese and an extra sprinkle of freshly shredded Parmesan cheese.
  6. Bake the Pizza: Place the pizza in the preheated oven and bake for 10 to 12 minutes, or until the crust turns golden brown and the cheese is bubbly and has browned spots.
  7. Finish and Serve: Remove the pizza from the oven and garnish with thinly sliced fresh basil ribbons. Slice and serve hot for the best flavor.

Notes

  • Use whole milk for a richer sauce; alternatively, 2% milk can be used but will result in a lighter sauce.
  • If you prefer a stronger garlic flavor, you can sauté the minced garlic briefly in the butter before adding the flour.
  • To achieve a crispier crust, prebake the pizza dough for 3-4 minutes before adding toppings.
  • Freshly shredded cheeses melt better than pre-shredded types that contain anti-caking agents.
  • Leftover garlic sauce can be stored in an airtight container in the refrigerator for up to 3 days.
