A flavorful and spicy roasted nuts recipe inspired by the Weasleys from Harry Potter. These Dragon Roasted Nuts are perfect for snacking or entertaining guests with a fiery kick.

Cumin Spice Mix:
- 1 1/2 tsp Kosher salt
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper (may use 1/4 tsp for milder mix)
- 1/4 tsp cracked black pepper
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
Main Ingredients:
- 16 oz mixed nuts (3 oz cashews, 3 oz almonds, 3 oz pecans, 3 oz walnuts, omit peanuts for Paleo)
- 1 large egg white
- 170g honey
Instructions
- Preheat Oven: Preheat oven to 250°F (120°C) and line a large baking sheet with parchment paper.
- Coat Nuts: Whip egg white until frothy, add nuts, then mix in honey and Cumin Spice Mix until evenly coated.
- Roast: Spread coated nuts on the baking sheet and roast for 45-60 minutes, stirring every 15 minutes for even toasting.
- Cool and Store: Let nuts cool for 10 minutes, break into chunks, and store in an airtight container for up to 2 weeks.
Notes
- Make sure to stir the nuts every 15 minutes during roasting for even cooking.
- Adjust the level of spiciness by varying the amount of cayenne pepper used.
