Instructions

  1. Prepare the filling: In a large bowl, combine shredded chicken, softened cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix well, adjusting the hot sauce quantity to match your preferred spice level.
  2. Assemble the egg rolls: Lay an egg roll wrapper on a clean surface oriented like a diamond. Place about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, fold in the sides tightly, then roll up firmly toward the top corner. Seal the edge with the beaten egg to secure the roll.
  3. Heat the oil: In a deep skillet or fryer, heat approximately 2 inches of vegetable oil to 350°F (175°C) to prepare for frying.
  4. Fry the egg rolls: Carefully place egg rolls in the hot oil in batches. Fry for 3–4 minutes or until they turn golden brown and crispy. Remove them with a slotted spoon and drain on paper towels to remove excess oil.
