For the Chocolate Cake:

- 2 and 1/4 cups buttermilk, room temperature
For the Chocolate Ganache and Mousse:
- 4 cups mini chocolate chips
- 4–6 Chocolate squares, cut in half
- 16 oz. (1Ib) semisweet or dark chocolate, chopped
- 1/4 cup unsalted butter, cut into small pieces
- 1 and 1/2 cups heavy cream
- 4 oz. dark or semisweet chocolate, chopped
- 3/4 cups heavy cream, divided
- 2 tablespoon powdered sugar
Instructions
- Preheat the Oven: Preheat oven to 350°F (177°C). Grease and prepare cake pans.
- Mix Dry Ingredients: Sift flour, cocoa, salt, baking soda, and baking powder. Set aside.
- Cream Butter and Sugar: Beat butter and sugar until fluffy.
- Add Eggs and Flavorings: Add eggs, vanilla, and coffee mixture. Mix in sour cream.
- Combine Dry and Wet Ingredients: Alternate adding dry ingredients and buttermilk to the batter.
- Divide Batter: Divide batter into 6 portions.
- Bake: Bake layers in batches until done.
- Make Ganache: Prepare ganache and mousse separately.
- Assemble Cake: Layer cake with ganache and mousse.
- Chill and Frost: Chill cake, frost with ganache, and decorate with chocolate chips and squares.
