  • juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh, chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce leaves

Instructions

  1. Heat: Heat a pan to medium high heat, add sesame oil, onions, garlic, and ginger. Cook until fragrant.
  2. Cook the chicken: Add ground chicken to the pan, season, and cook until golden brown.
  3. Make the sauce: Mix soy sauce, chili sauce, lime juice, and honey in a bowl.
  4. Combine: Add sauce to chicken, sprinkle cashews, and cook briefly. Stir in carrots, scallions, and cilantro.
