  • 16 slices American cheese (from an 8 oz. package; Boar’s Head suggested)
  • 4 tablespoons melted unsalted butter
  • Everything bagel seasoning, for sprinkling

Meat and Eggs

  • 1 pound ground pork breakfast sausage
  • 6 large eggs
  • 6 slices thick bacon, cooked and chopped
  • Salt and pepper, as desired

Sriracha Mayo

  • 1/2 cup mayonnaise
  • 12 tablespoons sriracha or your favorite hot sauce
  • 1 teaspoon Worcestershire sauce
  • Pinch of salt

Garnish

  • Finely chopped chives, if desired, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper. Set aside for assembling the sliders.
  2. Cook Sausage and Scramble Eggs: In a medium skillet over medium heat, cook the ground pork sausage thoroughly until no longer pink. Remove and drain on paper towels. Using the same skillet, scramble the eggs seasoned with salt and pepper to taste. Set aside the cooked sausage and scrambled eggs.
  3. Prepare Rolls and Layer Ingredients: Without separating the Hawaiian rolls, slice them horizontally with a serrated knife. Place the bottom halves on the prepared sheet pan. Layer half of the cheese slices over the rolls, then evenly distribute the cooked sausage, followed by chopped bacon pieces. Next, add the scrambled eggs in an even layer, topping with the remaining cheese slices.
  4. Assemble and Season: Place the top halves of the rolls over the layered ingredients. Brush the tops generously with melted butter, then sprinkle everything bagel seasoning evenly over the buttered rolls.
  5. Bake the Sliders: Cover the assembled sliders loosely with foil and bake in the preheated oven for 15-20 minutes. Remove the foil and continue baking for an additional 5-10 minutes until the tops are golden brown and the cheese is melted.
  6. Make Sriracha Mayo: While the sliders bake, whisk together mayonnaise, sriracha, Worcestershire sauce, and a pinch of salt in a small bowl to create the spicy dipping sauce.
  7. Serve: Once baked, optionally garnish the sliders with finely chopped chives. Slice into individual sandwiches and serve hot with the prepared sriracha mayo on the side.
