- 1/4 cup honey
- 1/4 cup unsalted butter, melted (plus extra for brushing)
- 1 large egg
Optional:

Instructions
- Preheat oven: Preheat the oven to 400°F (200°C) and grease a mini muffin pan.
- Mix dry ingredients: In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- Mix wet ingredients: In another bowl, combine buttermilk, honey, melted butter, and egg; whisk until smooth.
- Combine ingredients: Mix wet and dry ingredients until just blended.
- Fill muffin pan: Spoon batter into muffin pan, filling each cavity 3/4 full.
- Bake: Bake for 10–12 minutes until golden and a toothpick comes out clean.
- Brush with butter: While warm, brush tops with melted butter and drizzle with honey if desired.
- Cool and serve: Let cool slightly before serving. Enjoy warm!

- You can customize these poppers by adding jalapenos for a spicy kick.
- For a richer flavor, use melted bacon fat instead of butter.
