Instructions
- Preheat oven to 375°F. Line baking sheets with parchment.
- Grate zucchini and squeeze out excess moisture.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Gently fold in grated zucchini and mini chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing apart.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
