Description

A delicious and easy Slow Cooker Parmesan Garlic Chicken Sandwich recipe that combines tender, flavorful shredded chicken with melted mozzarella and toasted garlic butter rolls for a comforting meal perfect for lunch or dinner.

Ingredients

Scale

Chicken Mixture

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Sandwich

  • 6 sandwich rolls
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the chicken: Place the chicken breasts in the slow cooker and pour the chicken broth evenly over them to keep the meat moist during cooking.
  2. Season the chicken: In a small bowl, mix the Parmesan cheese, minced garlic, dried basil, dried parsley, salt, and black pepper. Sprinkle this flavorful mixture evenly over the chicken breasts in the slow cooker.
  3. Cook the chicken: Cover the slow cooker and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the chicken is very tender and easily shredded with a fork.
  4. Preheat oven and shred chicken: Preheat your oven to 375°F (190°C). Remove the chicken from the slow cooker, shred it with two forks, then return the shredded chicken to the slow cooker and mix it well with the remaining cooking juices to keep it moist.
  5. Toast the rolls: Split the sandwich rolls in half and brush the inside surfaces with a mixture of melted butter and garlic powder. Place them on a baking sheet and toast in the preheated oven for about 5 minutes until they turn golden brown and fragrant.
  6. Assemble the sandwiches: Spoon a generous amount of shredded chicken onto the bottom half of each toasted roll, sprinkle shredded mozzarella cheese over the chicken, then top with the other half of the roll.
  7. Serve and enjoy: Serve the sandwiches hot for a comforting, cheesy, garlicky meal perfect for any day of the week.

Notes

  • You can substitute sandwich rolls with hoagie buns or ciabatta bread for a different texture.
  • For extra heat, add a pinch of red pepper flakes to the Parmesan mixture.
  • Leftover shredded chicken can be refrigerated for up to 3 days or frozen for up to 2 months.
  • If you don’t have a slow cooker, you can bake the chicken covered in broth and seasoning at 325°F for about 1.5-2 hours or until tender.
  • Use fresh herbs if available to enhance the flavor even more.
