Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside to keep your scones from sticking and for easy cleanup.
  2. Grate the frozen butter: Using a grater, grate the frozen butter into a bowl and return it to the freezer until you are ready to mix the dough. This ensures the butter stays cold for a flaky texture.
  3. Combine dry ingredients: In a large bowl, mix together the all-purpose flour, grated frozen butter, shredded cheddar cheese, crispy bacon, thinly sliced green onions, granulated sugar, baking powder, fine sea salt, garlic powder, and onion powder.
  4. Add the cream and mix: Make a well in the center of the bowl and pour in the cold heavy cream. Gently stir with a rubber spatula until the mixture is mostly combined. Then use your hands to scoop the dough, letting it fall through your fingers to break up clumps and hydrate all the flour evenly. Chill the dough in the refrigerator for 15 minutes to firm up.
  5. Shape the dough: After chilling, place the dough on a lightly floured surface and gently press it into an 8-inch round. Cut the round into 8 equal wedges (scones).
