Ricotta Pistachio Honey Bites:
- 1 cup whole milk ricotta cheese
- 1/3 cup crushed pistachios
- 3 tablespoons honey plus more for drizzling
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/3 cup all-purpose flour
- 1 egg beaten
- 1/2 cup Panko breadcrumbs
- Neutral oil for frying
Instructions
- Mix Ingredients: In a bowl, combine ricotta, crushed pistachios, 3 tbsp honey, vanilla, and salt. Chill for 15–20 minutes.
- Form Balls: Shape the mixture into 14 small balls.
- Coat Balls: Roll each ball in flour, dip in beaten egg, then coat with breadcrumbs.
- Fry: Heat oil to 350°F (175°C) and fry balls in batches for 2–3 minutes until golden brown.
- Drain and Serve: Place on paper towels to drain, then drizzle with honey before serving.
Notes
- For a twist, try adding a sprinkle of cinnamon or a dash of nutmeg to the ricotta mixture.
- These bites can also be baked in the oven for a lighter version—just bake at 375°F (190°C) until golden.
