Ricotta Pistachio Honey Bites:

  • 1 cup whole milk ricotta cheese
  • 1/3 cup crushed pistachios
  • 3 tablespoons honey plus more for drizzling
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup all-purpose flour
  • 1 egg beaten
  • 1/2 cup Panko breadcrumbs
  • Neutral oil for frying

Instructions

  1. Mix Ingredients: In a bowl, combine ricotta, crushed pistachios, 3 tbsp honey, vanilla, and salt. Chill for 15–20 minutes.
  2. Form Balls: Shape the mixture into 14 small balls.
  3. Coat Balls: Roll each ball in flour, dip in beaten egg, then coat with breadcrumbs.
  4. Fry: Heat oil to 350°F (175°C) and fry balls in batches for 2–3 minutes until golden brown.
  5. Drain and Serve: Place on paper towels to drain, then drizzle with honey before serving.

Notes

  • For a twist, try adding a sprinkle of cinnamon or a dash of nutmeg to the ricotta mixture.
  • These bites can also be baked in the oven for a lighter version—just bake at 375°F (190°C) until golden.
