Ingredients
Scale
Protein and Vegetables
- 3 Boneless Skinless Chicken Breasts, diced
- ½ Yellow Onion, diced
- 1 Red Bell Pepper, cut into strips
- 1 Green Bell Pepper, cut into strips
- 1 Orange Bell Pepper, cut into strips
Seasoning and Liquids
- 2 tablespoons Olive Oil
- 1 Packet Fajita Seasoning
- 8 ounces Tomato Sauce
- 2 cups Chicken Broth
Grains
- 2 cups Minute Rice
Topping
- Gordos Cheese Dip, as desired
Instructions
- Cook the Vegetables and Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the diced onions and bell peppers and cook, stirring occasionally, for 2-3 minutes until slightly softened. Add the diced chicken breasts to the skillet, sprinkle the fajita seasoning over the chicken and veggies, and cook for 7-8 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Add Rice, Tomato Sauce, and Broth: Once the chicken is fully cooked, add the Minute rice, tomato sauce, and chicken broth to the skillet. Stir everything together well to combine all the flavors. Bring the mixture to a gentle simmer.
- Simmer and Finish Cooking: Allow the skillet mixture to simmer for 2 minutes to begin absorbing the liquid. Then, turn off the heat and cover the skillet, letting the rice finish absorbing the broth for a few minutes until tender.
- Serve with Gordos Cheese Dip: Spoon portions of the chicken fajita skillet onto plates and top each serving generously with Gordos Cheese Dip. Serve immediately and enjoy a flavorful, cheesy meal.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F for safety.
- Minute rice cooks quickly and absorbs liquid fast, so do not overcook once broth is added.
- Adjust fajita seasoning amount if you prefer more or less spice.
- You can substitute Gordos Cheese Dip with any creamy queso or cheese sauce of your choice.
- For extra freshness, garnish with chopped cilantro or a squeeze of lime juice before serving.
