Description

Pumpkin Delight Lush Dessert is a creamy, layered no-bake treat featuring a graham cracker crust, a rich cream cheese cheesecake layer, a spiced pumpkin pudding layer, and topped with fluffy whipped topping and crunchy pecans. Perfect for fall gatherings or any occasion craving a luscious pumpkin-flavored dessert.

Ingredients

Scale

Crust

  • 2 cups graham cracker crumbs
  • 1 tbsp granulated sugar
  • ½ cup unsalted butter, melted

Cheesecake Layer

  • 16 oz cream cheese, softened
  • 1½ cups powdered sugar
  • 16 oz whipped topping, thawed (divided into 1½ cups and 2 cups)

Pumpkin Layer

  • 3.4 oz box instant vanilla pudding
  • 12 oz can evaporated milk
  • 15 oz can pure pumpkin
  • 1½ tsp pumpkin spice

Topping

  • ¼ cup chopped pecans

Instructions

  1. Prepare the crust: In a small bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Pour this mixture into a 9×13 inch baking dish and press it down firmly to form an even crust layer.
  2. Make the cheesecake layer: Using a mixer, beat softened cream cheese and powdered sugar on high speed until fully blended and smooth. Gradually beat in 1½ cups of the whipped topping on medium speed until the mixture is light and fluffy.
  3. Assemble cheesecake layer: Spread the cream cheese mixture evenly over the prepared graham cracker crust. Place the dish in the refrigerator to chill while preparing the pumpkin pudding layer.
  4. Prepare pumpkin layer: Beat together the instant vanilla pudding mix and evaporated milk until thickened. Then beat in the canned pure pumpkin and pumpkin pie spice until fully incorporated.
  5. Combine pumpkin mixture with topping: Fold in ½ cup of whipped topping gently into the pumpkin mixture to lighten it, then spread this layer evenly on top of the chilled cheesecake layer.
  6. Add final whipped topping and garnish: Spread the remaining 2 cups of whipped topping over the pumpkin layer and sprinkle with chopped pecans evenly on top.
  7. Chill: Refrigerate the assembled dessert for at least 2 hours or until set and ready to serve.

Notes

  • This dessert is best served chilled and consumed within 2-3 days for optimal freshness.
  • For a nut-free option, omit the chopped pecans from the topping.
  • You can substitute the whipped topping with homemade whipped cream if preferred.
  • Make sure to soften the cream cheese to room temperature for easier mixing and a smoother texture.
  • Use a flat-bottomed cup or spatula to press the crust evenly without crumbling.
