Cake:

  • 3/4 cup sour cream or plain full-fat Greek yogurt, at room temperature
  • 2 large eggs, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup granulated sugar
  • 1/2 cup neutral oil, such as grapeseed, vegetable, or canola
  • 1/4 cup water
  • 1 teaspoon vanilla extract or paste
  • 1/4 cup light or dark brown sugar
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • Flaky salt, for sprinkling (optional)
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Make the pecan topping: Heat the oven to 350ºF. Coat a 9-inch round cake pan with butter or cooking spray. Place brown sugar, butter, honey, and salt in a saucepan. Cook until melted. Stir in pecans and transfer to cake pan.
  2. Make the cake: Whisk flour, baking powder, and baking soda. In a separate bowl, whisk sour cream, eggs, sugar, oil, water, vanilla, and salt. Stir in flour mixture. In a separate bowl, mix brown sugar and cinnamon. Dollop and spread batter over pecans. Bake until golden and cooked through.
  3. Let cool, invert onto a plate, sprinkle with salt, and serve with ice cream if desired.
