Description

Delicious Peach Cobbler Cheesecake Bars combine a buttery crust, juicy peach slices, and a creamy cheesecake layer topped with a cinnamon-spiced crumb. This dessert perfectly blends the flavors of classic peach cobbler with rich cheesecake for a crowd-pleasing treat ideal for any occasion.

Ingredients

Scale

Crust

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1 cup unsalted butter, softened

Peach Layer

  • 3 peaches, pitted, peeled, and thinly sliced

Cheesecake Layer

  • 12 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Crumb Topping

  • 1 1/2 cups all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp fine sea salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F. Line a 9×13 inch baking dish with foil and spray it with cooking spray to prevent sticking. Set aside.
  2. Make Crust: In a large bowl, stir together 2 cups flour, powdered sugar, and 1/2 tsp cinnamon. Add the softened butter and use a pastry cutter to combine until mixture resembles coarse crumbs. Press this dough evenly into the bottom of the prepared baking dish.
  3. Bake Crust: Bake the crust for about 20 minutes or until it is set. Remove from the oven and set aside to cool slightly.
  4. Add Peach Layer: Arrange the sliced peaches evenly over the baked crust layer.
  5. Prepare Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Layer Cheesecake: Pour the cheesecake mixture evenly over the peach layer in the baking dish.
  7. Make Crumb Topping: In another bowl, combine 1 1/2 cups flour, brown sugar, granulated sugar, cinnamon, nutmeg (if using), and salt. Add melted butter and stir with a fork until the mixture forms crumbs.
  8. Add Crumb Topping: Sprinkle the crumb topping evenly over the cheesecake layer.
  9. Bake Bars: Bake for 45-55 minutes until the top is lightly golden brown and the cheesecake is set. A very slight jiggle in the center is okay.
  10. Cool and Chill: Allow the bars to cool completely on the countertop. Then refrigerate for several hours or overnight until fully set before slicing and serving.

Notes

  • These bars can be served at room temperature, warm, or cold; they are especially delicious chilled.
  • Peaches can be substituted with other stone fruits like nectarines or apricots.
  • Ensure cream cheese is softened to avoid lumps in the cheesecake layer.
  • Use fresh peaches for the best flavor; canned peaches may make the crust soggy.
  • If nutmeg is not desired, it can be omitted without affecting the overall flavor significantly.
