Sausage:
- 1 lb sausage (Italian or smoked), sliced into rounds
Rice Mixture:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté Sausage: In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for 4–5 minutes. Remove and set aside.
- Cook Veggies: In the same skillet, sauté onion and bell pepper for 3–4 minutes. Stir in garlic and cook for 30 seconds.
- Add Spices and Rice: Add smoked paprika and black pepper. Stir in uncooked rice and toast for 1–2 minutes.
- Add Liquids and Sausage: Pour in chicken broth and BBQ sauce. Stir well. Return the sausage to the pan.
- Simmer: Bring to a boil. Cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender and liquid is absorbed.
- Rest and Serve: Let rest for 5 minutes. Fluff with a fork. Garnish with parsley and serve warm.
