Sausage:

  • 1 lb sausage (Italian or smoked), sliced into rounds

  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté Sausage: In a large skillet, heat olive oil over medium heat. Add sausage rounds and brown for 4–5 minutes. Remove and set aside.
  2. Cook Veggies: In the same skillet, sauté onion and bell pepper for 3–4 minutes. Stir in garlic and cook for 30 seconds.

  4. Add Liquids and Sausage: Pour in chicken broth and BBQ sauce. Stir well. Return the sausage to the pan.
  5. Simmer: Bring to a boil. Cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender and liquid is absorbed.
  6. Rest and Serve: Let rest for 5 minutes. Fluff with a fork. Garnish with parsley and serve warm.
