  • Author: Olivia
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

This One-Pan Bold Honey BBQ Chicken Rice is a comforting, flavorful dish combining tender seared chicken thighs with a sweet and smoky BBQ honey sauce, cooked together with long-grain rice and mixed vegetables. Perfect for an easy weeknight meal, it requires only one skillet for minimal cleanup.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken thighs or breasts

Grains

  • 1 cup long-grain rice

Liquids

  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey

Vegetables & Aromatics

  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season and Sear Chicken: Pat the chicken dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a large skillet over medium heat and sear the chicken thighs for about 5 minutes on each side until they are browned and slightly crispy.
  2. Prepare BBQ Honey Sauce: In a small bowl, whisk together the BBQ sauce and honey until well combined. Pour this sauce evenly over the seared chicken in the skillet.
  3. Add Rice and Broth: Add the long-grain rice to the skillet and pour in the chicken broth. Stir gently to combine all ingredients and ensure the rice is submerged in the liquid.
  4. Simmer Covered: Bring the mixture to a simmer, then reduce the heat to low and cover the skillet with a lid. Let it cook for about 20 minutes until the rice is fully tender and has absorbed the broth.
  5. Add Vegetables: In the last 5 minutes of cooking, spread the mixed vegetables on top of the chicken and rice. Cover again and let the vegetables steam and warm through.
  6. Rest and Serve: Remove the skillet from heat and let it sit covered for 5 minutes. Then fluff the rice gently with a fork and serve the dish warm.

Notes

  • Use chicken thighs for juicier, more flavorful results, but chicken breasts work well if preferred.
  • Mixed vegetables can include peas, carrots, corn, or a medley of your choice.
  • Adjust the amount of honey or BBQ sauce depending on your sweetness preference.
  • If using fresh vegetables, chop them uniformly so they steam evenly.
  • This recipe can be doubled if using a larger skillet or pot.
  • For a spicy kick, add a pinch of cayenne pepper or chili flakes to the seasoning.
