Instructions
- Season and Sear Chicken: Pat the chicken dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a large skillet over medium heat and sear the chicken thighs for about 5 minutes on each side until they are browned and slightly crispy.
- Prepare BBQ Honey Sauce: In a small bowl, whisk together the BBQ sauce and honey until well combined. Pour this sauce evenly over the seared chicken in the skillet.
- Add Rice and Broth: Add the long-grain rice to the skillet and pour in the chicken broth. Stir gently to combine all ingredients and ensure the rice is submerged in the liquid.
- Simmer Covered: Bring the mixture to a simmer, then reduce the heat to low and cover the skillet with a lid. Let it cook for about 20 minutes until the rice is fully tender and has absorbed the broth.
- Add Vegetables: In the last 5 minutes of cooking, spread the mixed vegetables on top of the chicken and rice. Cover again and let the vegetables steam and warm through.
