  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp garlic powder
  • Salt & pepper, to taste

Vegetables:

  • 2 large zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup black olives, sliced
  • ½ cup sun-dried tomatoes, chopped

Additional:

  • ½ cup crumbled feta cheese

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Season the Chicken: Season the chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.
  3. Arrange Ingredients: In a greased baking dish, place the seasoned chicken breasts in the center. Surround them with zucchini slices, cherry tomatoes, and black olives.
  4. Bake: Bake the dish uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C). Optionally, top with crumbled feta cheese during the last few minutes of baking.
  5. Serve: Garnish with fresh parsley and serve hot.
