  • 1 tablespoon vanilla extract
  • 1 3/4 cups all-purpose flour

  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups grated zucchini (squeezed dry)
  • 1 cup add-ins (nuts, raisins, or chocolate chips)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, blend melted butter and sugar. Add eggs, milk, and vanilla; mix until smooth.

  3. In another bowl, sift together flour, baking soda, cinnamon, and salt.
  4. Gradually add to wet mixture until just combined.

  5. Fold in grated zucchini and desired add-ins.
  6. Pour batter into a lined loaf pan.
  7. Bake for 60 to 75 minutes; test doneness with a toothpick.
  8. Cool slightly in the pan before transferring to a wire rack.
