  • 1 clove garlic, minced
  • ½ tsp paprika
  • ⅓ tsp Kosher salt
  • ¼ tsp oregano or Italian seasoning

Instructions

  1. Preheat Skillet: Preheat a skillet over medium-high heat to prepare for cooking the kielbasa, ensuring it is hot enough to brown the sausage properly.
  2. Brown the Kielbasa: Slice the kielbasa sausage into rounds and add them to the hot skillet. Stir occasionally to brown evenly for about 6 minutes. Once browned, remove the kielbasa from the skillet and set aside, leaving the rendered fat in the pan.
  3. Prepare Vegetables: While the kielbasa is browning, chop the onion and potatoes into bite-sized pieces so they cook evenly.
  4. Cook the Potatoes: Add the chopped potatoes to the skillet with the kielbasa fat. Sprinkle with paprika, kosher salt, and oregano. Stir well to coat the potatoes evenly. Reduce the heat to medium or medium-low, cover the skillet, and cook the potatoes for about 13 minutes, stirring regularly to prevent sticking and ensure they cook through evenly.
  5. Sauté Onions and Garlic: Add the chopped onions and minced garlic to the skillet with the potatoes. Cover and continue cooking for about 12 minutes, stirring regularly until the potatoes are softened and the onions are translucent and cooked through.
  6. Combine and Finish Cooking: Return the browned kielbasa to the skillet, mixing everything thoroughly. Cook for an additional 4 minutes to blend the flavors and heat everything through before serving.

Notes

  • Use a heavy-bottomed skillet to prevent sticking and promote even cooking.
  • If potatoes begin to stick, add a splash of water or broth to loosen them while cooking.
  • Feel free to substitute the kielbasa with other smoked sausages if desired.
