Ingredients
Scale
Pasta
- 12 oz Fettuccine Pasta (Feel free to swap with gluten-free options.)
Salmon
- 4 fillets Salmon Fillets (Ensure it’s thawed if using frozen.)
- to taste Salt
- to taste Black Pepper
- 2 tbsp Olive Oil (Can substitute with canola or avocado oil.)
Sauce
- 2 tbsp Butter (Can be replaced with vegan butter.)
- 4 cloves Garlic (Fresh minced preferred.)
- 1 cup Heavy Cream (Consider coconut cream or a plant-based alternative for lighter options.)
- 1/2 cup Parmesan Cheese (Nutritional yeast can be used as a dairy-free substitute.)
- 1/4 tsp Red Pepper Flakes (Optional for heat.)
- 2 tbsp Lemon Juice (Fresh juice gives the best results.)
Garnish
- 2 tbsp Fresh Parsley (For garnish.)
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente according to package instructions. Drain the pasta and set it aside for later.
- Sear Salmon: Season the salmon fillets with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Place the salmon in the hot skillet and sear for 2-3 minutes per side until the surface is golden and the salmon is cooked through. Remove from the skillet and set aside.
- Prepare Sauce: In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and stir to combine. Add Parmesan cheese, lemon juice, and optional red pepper flakes. Stir continuously until the sauce thickens and becomes creamy.
- Combine: Add the drained fettuccine to the skillet and toss it gently in the sauce until well coated. Flake the seared salmon into chunks and fold them into the pasta and sauce mixture carefully to avoid breaking up the salmon too much.
- Serve: Plate the creamy garlic salmon pasta and garnish with fresh parsley. Serve warm and enjoy your indulgent dish.
Notes
- You can substitute fettuccine with gluten-free pasta if desired.
- For a lighter version, use coconut cream or plant-based cream alternatives instead of heavy cream.
- Vegan or dairy-free options for butter and Parmesan include vegan butter and nutritional yeast, respectively.
- Adjust the amount of red pepper flakes to control the heat level or omit for a milder flavor.
- Make sure salmon is thawed completely if using frozen fillets for even cooking.
