Instructions
- Making the Cookie Dough: Melt the butter in a medium saucepan. Whisk in the brown sugar and bring to a boil. Remove from heat, transfer to a bowl, and add vanilla. Mix in almond flour and salt. Cool slightly, then stir in the egg white. Let the dough thicken for 10 minutes.
- Baking the Cookies: Preheat oven to 350°F. Line baking sheets with parchment paper. Adjust dough consistency if needed. Drop teaspoon-sized amounts of dough onto sheets. Bake for 7-9 minutes until golden brown. Cool on a wire rack.
- Preparing the Filling: Melt chocolate and cream together. Stir in vanilla and espresso powder. Let cool until spreadable consistency.
- Assembling the Cookies: Sandwich chocolate filling between pairs of cookies or use melted milk chocolate. Store in an airtight container.
