Instructions
- Heat the pan: Heat a large skillet or deep pan over medium heat to prepare for searing the chicken.

- Sear the chicken: Add a drizzle of cooking oil to the heated pan. Place the chicken in the pan and sear each side for 3-4 minutes until golden brown. Remove from pan and set aside.
- Toast the rice: In the same pan, add the uncooked rice and toast for 1-2 minutes while stirring frequently to bring out a nutty flavor.
- Add liquids and sauce: Pour in the chicken broth, then stir in the BBQ sauce and honey until well combined.
- Return chicken to pan: Nestle the seared chicken back into the rice mixture, ensuring it is partially submerged in the liquid.
- Simmer: Bring the mixture to a gentle boil, then reduce heat to low. Cover the pan and let it simmer for 15 minutes.
- Add vegetables: After 15 minutes, sprinkle the mixed vegetables evenly over the rice.
