Description

A delicious and easy Honey BBQ Chicken Rice recipe that combines tender, seasoned chicken thighs with a flavorful honey BBQ sauce, perfectly cooked rice, and mixed vegetables for a wholesome one-pan meal.

Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • Drizzle of cooking oil

Rice and Sauce

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce (your choice)
  • ¼ cup honey

Vegetables and Garnish

  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley for garnish

Instructions

  1. Heat the pan: Heat a large skillet or deep pan over medium heat to prepare for searing the chicken.
  2. Season the chicken: Season the chicken thighs or breasts evenly with garlic powder, onion powder, smoked paprika, salt, and pepper for a well-rounded flavor.
  3. Sear the chicken: Add a drizzle of cooking oil to the heated pan. Place the chicken in the pan and sear each side for 3-4 minutes until golden brown. Remove from pan and set aside.
  4. Toast the rice: In the same pan, add the uncooked rice and toast for 1-2 minutes while stirring frequently to bring out a nutty flavor.
  5. Add liquids and sauce: Pour in the chicken broth, then stir in the BBQ sauce and honey until well combined.
  6. Return chicken to pan: Nestle the seared chicken back into the rice mixture, ensuring it is partially submerged in the liquid.
  7. Simmer: Bring the mixture to a gentle boil, then reduce heat to low. Cover the pan and let it simmer for 15 minutes.
  8. Add vegetables: After 15 minutes, sprinkle the mixed vegetables evenly over the rice.
  9. Cook further: Cover again and continue cooking for 5 more minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C).
  10. Rest and fluff: Remove the pan from heat, let it sit covered for 5 minutes to allow flavors to meld. Then fluff the rice with a fork.
  11. Garnish and serve: Garnish with chopped green onions or parsley and serve the dish hot for a comforting meal.
