For the Cake:
- 400g (1¾ cups) sweetened yogurt (Greek yogurt recommended)
- 4 large eggs, room temperature
- 40g (⅓ cup) cornstarch
- 70g fresh or frozen blueberries, for batter

- 20g fresh or frozen blueberries
Instructions
- Preparation: Preheat oven to 170°C (340°F). Line a 15cm (6-inch) round cake pan with parchment paper and lightly grease the sides.
- Make the Batter: In a large bowl, whisk together yogurt and eggs until smooth. Sift cornstarch over the mixture and fold gently until well combined. Carefully fold in 70g blueberries.
- Assemble: Pour the batter into the prepared pan. Arrange the remaining 20g blueberries on top and tap the pan gently to remove air bubbles.
- Bake and Cool: Bake for 50-55 minutes until set with a slightly jiggly center. Cool the cake completely at room temperature, then refrigerate for a minimum of 2 hours before serving.
