Zucchini:
- 2 medium zucchini, sliced
Beef Mixture:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 lb lean ground beef
- 2 tsp Italian seasoning
- ½ tsp kosher salt
- ½ tsp black pepper
- 28 oz can diced tomatoes, drained
- 2 cups shredded mozzarella cheese
Instructions
- Prep zucchini: Start by salting the zucchini slices, letting them rest, rinsing, and patting them dry.
- Cook onion and garlic in olive oil until translucent. Add the ground beef and cook until browned.
- Mix in tomatoes and seasonings; then, remove from heat.
- Layer the meat mixture, zucchini slices, and shredded mozzarella cheese in a baking dish. Repeat the layers.
- Bake at 350°F for 20–25 minutes until the cheese is melted and bubbly.
- Let the dish rest for 10 minutes before serving.
