  • 8 slices provolone cheese, thinly sliced

Au Jus Sauce

  • 1 can beef consommé (10.5 ounces)
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preparation: Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper. Lay a tortilla flat on your clean countertop.
  2. Assemble Roll Ups: Place 2 slices of provolone cheese over half of the tortilla, then add approximately 3 ounces of freshly sliced roast beef. Top with a generous handful of French fried onions. Brush the inside edge of the tortilla lightly with olive oil to help seal it.
  3. Roll and Seal: Starting from the filled end, roll the tortilla tightly so all fillings are enclosed. Press the oiled edge to seal and place the roll seam-side down on the prepared baking sheet. Repeat with remaining tortillas, brushing tops and sides with the remaining olive oil.
  4. Baking: Bake the roll ups for 8–10 minutes, rotating the baking sheet halfway through. Bake until tortillas are golden brown and cheese is beginning to bubble.
  5. Rest and Slice: Remove roll ups from the oven and let them rest for 2 minutes on a wire rack before slicing into halves or thirds. Arrange slices on a serving platter.
  6. Prepare Au Jus Sauce: In a small saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Heat over medium heat, whisking to blend, and bring to a gentle simmer for 3–4 minutes until hot and fragrant.
  7. Serve: Serve the sliced tortilla roll ups immediately with the warm au jus dipping sauce on the side.
