  • Author: Olivia
  • Total Time: 25 minutes
  • Yield: 4 servings (1 roll up per person) 1x

Description

These French Dip Tortilla Roll Ups are a comforting and delicious twist on the classic French dip sandwich. Thinly sliced roast beef and melted mozzarella or provolone cheese are rolled up in soft flour tortillas, baked to a golden perfection, and served with a flavorful homemade au jus for dipping. Perfect as a hearty appetizer or a satisfying main dish, these roll ups combine melty cheese, tender beef, and savory broth in every bite.

Ingredients

Scale

Roll Ups

  • 1 lb thinly sliced roast beef (deli style or leftover)
  • 1½ cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus Sauce

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Assemble Roll Ups: Lay each flour tortilla flat on a clean surface. Place a generous layer of thinly sliced roast beef down the center, followed by a sprinkle of shredded mozzarella or provolone cheese.
  3. Roll Tortillas: Roll the tortillas tightly around the beef and cheese, then place them seam-side down on the prepared baking sheet to keep them from unrolling during baking.
  4. Season and Butter: Brush the tops of the rolled tortillas with melted butter, then evenly sprinkle garlic powder, onion powder, and dried parsley for extra flavor and a golden finish.
  5. Bake: Bake the roll ups in the preheated oven for 12–15 minutes, or until the tortillas are golden brown and the cheese inside has melted completely.
  6. Prepare Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Simmer the mixture for 5–7 minutes to develop a rich and flavorful au jus sauce.
  7. Serve: Remove the baked roll ups from the oven and slice each into smaller portions if desired. Serve warm alongside the au jus for dipping, enhancing each bite with savory broth.

Notes

  • Use leftover roast beef or deli-style thinly sliced beef for convenience.
  • For extra crispiness, you can broil the roll ups for 1-2 minutes at the end of baking, but watch carefully to avoid burning.
  • Substitute cheddar cheese if preferred for a different flavor profile.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven to maintain crispness.
  • If you want to make this recipe gluten-free, use gluten-free tortillas and check beef broth and Worcestershire sauce labels for gluten content.
