- 1/4 cup toasted pine nuts or slivered almonds
Instructions
- Sauté aromatics & spices: Heat olive oil in a medium saucepan over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until softened. Stir in the minced garlic, ground cumin, coriander, cinnamon, and turmeric, cooking for an additional minute until the spices release their fragrance.
- Cook rice: Add the rinsed rice to the saucepan, stirring to coat each grain with the spiced oil mixture. Pour in the broth along with the lemon zest and a pinch of salt. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for 15 minutes, or until the rice is tender and the liquid has been fully absorbed.
- Finish: Remove the saucepan from heat. Use a fork to fluff the rice gently, separating the grains. Stir in the fresh lemon juice and chopped parsley or cilantro. Taste and adjust seasoning with salt and pepper according to preference.
- Serve: Garnish with toasted pine nuts or slivered almonds if using. Serve the rice warm as a vibrant side dish alongside grilled meats, fish, or roasted vegetables.
