Base and Topping
- ¾ cup (170g) Nutella
- ½ cup (120ml) heavy cream
- ¾ cup (170g) butter, melted
- ¾ cup (150g) brown sugar, lightly packed
- 1 cup (90g) rolled oats (not instant; pulse large oats briefly in a food processor if desired)
- 1 cup (125g) all-purpose flour
- 1 pinch salt
- ½ teaspoon baking soda
- 1¼ – 1½ cups (225-270g) mini dark or semi-sweet chocolate chips
Instructions
- Prepare the Pan: Preheat your oven to 350°F (180°C). Grease and flour an 8-inch (20 cm) square cake pan or line it with parchment paper for easy removal.
- Mix Base Ingredients: In a medium bowl, combine the melted butter, brown sugar, rolled oats, all-purpose flour, salt, and baking soda. Mix them thoroughly until well combined.
- Bake the Base: Press just over half of this mixture evenly into the bottom of the prepared pan. Bake this base layer for 10 minutes in the preheated oven.
- Prepare Nutella Cream: While the base bakes, place the Nutella and heavy cream in a small pot. Heat over low heat, whisking constantly until the mixture is smooth and well combined. Remove from heat and set aside.
- Assemble the Bars: Once the base is out of the oven, immediately sprinkle with half of the mini chocolate chips. Then spread the Nutella cream mixture evenly over the base and chocolate chips. Sprinkle the remaining oat dough mixture on top.
- Bake Assembled Bars: Return the pan to the oven and bake for 15 to 20 minutes, or until the edges are slightly browned and the topping is set.
- Cool and Chill: Remove the pan from the oven and allow the bars to cool to room temperature. Cover with foil and refrigerate for approximately 2 hours or overnight to set fully.
- Serve: Once chilled, cut into squares and serve. Enjoy these rich, chewy Nutella bars as a decadent dessert or snack.
