- 2 cups cooked jasmine rice (cold & day-old)
Vegetables:
- 1 green onion, finely chopped
Sauce:
- 2.5 tbsp regular soy sauce (or light soy sauce)
- 1/2 tbsp sesame oil
Eggs:
- 4 large eggs, beaten
Oil:
- 2 tbsp vegetable oil (or any neutral oil)
Instructions
- Heat oil: Heat vegetable oil in a large pan or wok until smoking.
- Add eggs: Pour in beaten eggs and stir-fry until they take shape.
- Combine rice and eggs: Add rice to the pan and break apart any clumps. Mix well.
- Stir in green onions: Push the rice to the side and sauté green onions in the empty space.
- Season and finish: Add soy sauce and sesame oil to the pan, toss everything until grains are browned. Serve hot.
