Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
- Prepare Egg Mixture: In a mixing bowl, whisk together eggs and cottage cheese until well combined. Add in spinach, shredded cheese, salt, and pepper. Mix well.
- Fill Muffin Tin: Pour the egg mixture evenly into the muffin tin cups, filling each about 2/3 full.
- Bake: Bake in the preheated oven for 20-25 minutes, until the egg bites are set and lightly golden.
- Cool and Serve: Allow the egg bites to cool slightly, then carefully remove from the tin. Enjoy!
