This easy-to-make recipe is perfect for busy weeknights and pairs beautifully with rice, pasta, or crusty bread for a comforting meal.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste

Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)

Add-ins & Garnish

  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley, for garnish

Instructions

  1. Season the Chicken: Season chicken breasts generously with salt and pepper on both sides to enhance their flavor before cooking.
  2. Prepare the Sauce: In a medium bowl, whisk together the chicken broth, heavy cream, grated Parmesan cheese, minced garlic, dried oregano, dried thyme, and optional red pepper flakes until well combined.
  3. Assemble in Crockpot: Place the seasoned chicken breasts in the crockpot and pour the prepared sauce evenly over the chicken.
  4. Add Sun-Dried Tomatoes: Sprinkle the drained chopped sun-dried tomatoes over the top of the chicken and sauce to add bursts of tangy sweetness.
  5. Cook: Cover and cook on LOW for 4 hours or on HIGH for 2 hours, until the chicken is tender and cooked through.
  6. Finish with Butter: During the last 30 minutes of cooking, add the butter and gently stir it into the sauce for added richness.
  7. Garnish and Serve: Just before serving, garnish with fresh basil or parsley. Serve your Marry Me Chicken with rice, pasta, or crusty bread for a complete meal.
