Instructions

  1. Prepare the strawberries: Cut off the stems from the strawberries and slice each strawberry in half. Next, carefully cut a small sliver off the back of each strawberry half so they can sit upright on a platter. Using a small melon baller, gently hollow out a small indent in the middle of each strawberry half. This hollow will hold the creamy filling and prevent it from sliding off.
  2. Whip the cream: In a medium-sized mixing bowl, beat the heavy whipping cream using an electric mixer until stiff peaks form. This will take approximately five minutes. Set aside once done.
  3. Make the cream cheese filling: In a separate bowl, combine the softened cream cheese, sour cream, sugar, vanilla extract, and fresh lemon juice (if using). Mix these ingredients thoroughly using an electric mixer until the mixture is completely smooth and creamy.
  4. Combine whipped cream and cream cheese mixture: Gently fold the whipped cream into the cream cheese mixture until well incorporated. Be careful to maintain as much volume as possible to keep the filling light and fluffy.
  5. Pipe the filling onto strawberries: Fill a piping bag fitted with a star tip with the cream cheese filling. Pipe a generous amount onto the hollowed section of each strawberry half, creating an attractive swirl or dollop of the creamy mixture.
