Ingredients
Scale
Main Ingredients
- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Boil Carrots: Place the carrot rounds into salted boiling water and cook for 10–12 minutes until they are fork-tender but not falling apart. Drain well and let them cool slightly for easier handling.
- Smash Carrots: Arrange the boiled carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press each carrot round to flatten it to about half its original thickness, aiming for even thickness for uniform roasting.
- Season and Oil: Drizzle the smashed carrots with olive oil, then sprinkle garlic powder, smoked paprika, salt, and black pepper evenly over them.
- Add Parmesan: Evenly sprinkle grated Parmesan cheese over the seasoned carrots to create a golden crust during roasting.
- Roast the Carrots: Roast the carrots in the preheated oven for 20–25 minutes, flipping them halfway through to ensure both sides become crisp and golden brown.
- Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley. Serve the crispy smashed carrots hot for the best texture and flavor.
Notes
- Do not overcook the carrots; they should be tender but still hold their shape for smashing.
- Use a flat-bottomed object like a glass or measuring cup for even smashing.
- Generously coat the carrots with olive oil to ensure crispiness.
- Flip the carrots halfway through roasting to brown evenly.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a 350°F (175°C) oven for 10-15 minutes to restore crispness.
- To make vegan, substitute Parmesan with nutritional yeast or plant-based cheese.
