Description

Cowboy Butter Chicken Linguine is a rich and flavorful pasta dish combining tender chicken pieces with a creamy, garlicky butter sauce laced with Dijon mustard, paprika, and red pepper flakes. This comforting meal is perfect for a hearty dinner and is elevated by the fresh parsley garnish and Parmesan cheese, delivering a deliciously balanced and silky sauce that clings beautifully to the linguine.

Ingredients

Scale

Pasta

  • 12 oz linguine

Chicken

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • Salt & black pepper to taste

Cowboy Butter Sauce

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tsp lemon juice
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, then set the pasta aside.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt and black pepper. Sauté the chicken until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside.
  3. Make the Cowboy Butter Sauce: In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in Dijon mustard, paprika, red pepper flakes, and lemon juice, mixing thoroughly to blend the flavors.
  4. Create the Creamy Base: Pour in the heavy cream while stirring to combine. Gradually add the grated Parmesan cheese, stirring continuously until the cheese melts smoothly into a creamy sauce.
  5. Combine Everything: Return the cooked chicken to the skillet and add the drained linguine. Toss everything together gently, adding reserved pasta water as needed to loosen the sauce and achieve a silky, cohesive texture that coats the pasta and chicken evenly.
  6. Garnish & Serve: Sprinkle the dish with the chopped fresh parsley for a fresh finish. Serve immediately while hot and enjoy your flavorful Cowboy Butter Chicken Linguine.

Notes

  • Adjust red pepper flakes according to your preferred spice level.
  • Reserving pasta water is crucial to adjust the sauce consistency.
  • Use freshly grated Parmesan for best flavor and smooth sauce texture.
  • To make it lighter, substitute heavy cream with half-and-half, but the sauce will be less rich.
  • Serve with a side salad or garlic bread for a fuller meal.
