Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and grease a silicone muffin tray to prevent sticking.
  2. Blend the Base: In a blender, combine the eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder. Blend the mixture until it is smooth and evenly combined, which ensures a creamy texture.
  3. Fill the Cups: Pour approximately ¼ cup of the blended egg mixture into each muffin cavity, filling them evenly to ensure consistent baking.
  4. Customize the Flavor: Add your selected mix-ins such as fresh spinach, bell peppers, broccoli, cooked sausage, or diced ham into each muffin cup. Stir gently to incorporate the ingredients, then sprinkle shredded cheese on top for extra flavor and a golden finish.
