Instructions

  1. Make the Dough: In a large bowl, whisk together the almond flour, chocolate protein powder, cocoa powder, and kosher salt until evenly combined. Add the almond butter, almond milk, maple syrup, and vanilla extract. Use a rubber spatula to mix the ingredients thoroughly until a cohesive dough forms.
  2. Form the Bites: Use a spoon to scoop heaping tablespoons (about 20g each) of the dough and roll them into balls, forming 12 bites in total. Place the balls on a parchment-lined baking sheet. If the dough is too sticky to handle, place it in the freezer for 15 minutes to firm up before rolling.
  3. Melt the Chocolate: In a medium heatproof bowl, combine the dark chocolate and refined coconut oil. Microwave in 30-second increments, stirring well between each, until the chocolate is completely melted and smooth, which should take about 90 seconds total.
  4. Coat the Bites: Using a fork, dip each brownie bite fully into the melted chocolate to coat evenly. Allow excess chocolate to drip off before transferring the coated bites back onto the parchment-lined baking sheet.
