  • Author: Olivia
  • Total Time: 38 minutes
  • Yield: 16 bars 1x

Description

Deliciously rich and crunchy Coffee Cookie Crack Bars combine a buttery graham cracker crust infused with instant coffee, topped with sweetened condensed milk, semi-sweet chocolate chips, and toffee bits. These bars are easy to make, baked to golden perfection, and perfect for a gourmet treat any time of day.

Ingredients

Scale

Crust

  • 1 sleeve (8 sheets) graham crackers, crushed into crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1 tsp instant coffee granules
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Topping

  • 1/2 cup sweetened condensed milk
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup toffee bits

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper to ensure easy removal of the bars after baking.
  2. Make the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter, brown sugar, instant coffee granules, vanilla extract, and salt. Mix well until evenly combined and press the mixture firmly and evenly into the bottom of the prepared baking dish.
  3. Bake the Crust: Place the crust in the preheated oven and bake for 8 minutes until the crust is lightly golden and set.
  4. Add the Sweetened Condensed Milk: Remove the baking dish from the oven and immediately pour the sweetened condensed milk evenly over the warm crust, spreading it gently if needed.
  5. Sprinkle Chocolate & Toffee: Evenly sprinkle the semi-sweet chocolate chips and toffee bits over the layer of sweetened condensed milk.
  6. Bake Again: Return the baking dish to the oven and bake for an additional 12 to 15 minutes, or until the edges are bubbly and golden brown, and the chocolate chips have melted slightly.
  7. Cool & Slice: Allow the bars to cool completely in the pan. For cleaner, sharper cuts, chill the bars in the refrigerator for at least 30 minutes before slicing into squares.

Notes

  • Crush graham crackers finely using a food processor or rolling pin for a sturdy crust base.
  • Dissolve coffee granules in the melted butter to distribute coffee flavor evenly.
  • Don’t overbake; bars will firm up as they cool for the perfect texture.
  • Line your pan with parchment paper for easy lifting and cutting.
  • Chill bars before cutting to achieve clean and sharp slices.
  • Store bars in an airtight container at room temperature for up to 5 days or refrigerate for firmer texture.
  • Freeze up to 3 months; thaw for 10-15 minutes before serving.
  • Substitutions: Use coconut oil and dairy-free condensed milk for a dairy-free option; swap chocolate chips for dark or white chocolate; add nuts for crunch; try different crushed cookies like Oreos or digestive biscuits.
