Description

Cucumbers:

  • 1 ½ pounds pickling cucumber (I used 8 cucumbers)

Brine:

  • 1 ½ tablespoons kosher salt
  • 1 small onion (sliced and used to your taste)
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 cup white vinegar
  • ½ cup apple cider vinegar
  • 2 tablespoons mustard seeds
  • ¾ teaspoon celery seeds
  • ¼ teaspoon turmeric

Instructions

  1. Wash and sterilize canning jars. Various sized jars will work.
  2. Wash and rinse the cucumbers. Slice into ¼” slices.
  3. Soak cucumbers in salt. Refrigerate for one hour.
  4. Rinse cucumbers well.
  5. Combine cucumbers and onions.
  6. Prepare brine. Cook ingredients until sugars melt. Simmer for five minutes.
  7. Pour hot brine over cucumbers and onions. Let sit for one hour.
  8. Transfer pickles to jars. Pour brine over, removing air pockets. Leave space at top.
  9. Seal jars tightly. Store in the refrigerator.
  10. Ready to eat! Chill and enjoy.

  • You can adjust the sweetness or tartness of the pickles by altering the sugar and vinegar proportions to suit your taste preferences.
