  • 4 yellow onions, thinly sliced

For the Braising Liquid:

  • 2 cups apple cider
  • 1 cup chicken broth or dry white wine
  • 2 cups sliced mushrooms
  • 4 cloves garlic, chopped
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon chopped fresh sage

Instructions

  1. Stove-Top: Preheat the oven to 400°F. Season the chicken with salt and pepper, then coat with flour. Sear the chicken in a skillet, then set aside. Cook onions in butter until softened. Add 1/2 cup cider, cook until evaporated. Add mushrooms, garlic, thyme, sage, chicken, remaining cider, and wine. Roast for 30 minutes. Serve with rice and bread. Drizzle with pan sauce and onions.
  2. Crockpot: Season chicken and sear in a Dutch Oven. Place onions in the crockpot, add chicken, mushrooms, garlic, thyme, sage, cider, and wine. Cook on low for 5-6 hours or high for 4-5 hours. Serve with rice and bread. Drizzle with pan sauce and onions.
