  • 2 large eggs, at room temperature
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup canola oil, vegetable oil, or melted coconut oil
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips, divided

Instructions

  1. Preheat Oven: Preheat oven to 350°F and grease a 9-by-5-inch loaf pan with nonstick cooking spray.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. Combine Wet Ingredients: In a large bowl, mix eggs, melted butter, oil, vanilla, and brown sugar until smooth.
  4. Combine Batter: Gently fold in dry ingredients, then add zucchini and 3/4 cup chocolate chips. Do not overmix.
  5. Bake: Pour batter into pan, top with remaining chocolate chips, and bake for 50-60 minutes until a toothpick comes out mostly clean.
  6. Cool and Serve: Let bread cool in pan for 15 minutes, then transfer to wire rack. Slice and serve warm.
