Description

Chicken Cordon Bleu Casserole combines classic flavors of chicken, ham, Swiss cheese, and a creamy Dijon mustard sauce into a comforting baked dish topped with crispy breadcrumbs. This hearty casserole features tender broccoli and a rich parmesan cream sauce, perfect for a family dinner or easy meal prep.

Ingredients

Scale

For the Dijon Cream Sauce

  • 3 tablespoons unsalted butter
  • 2 cloves garlic, grated or minced
  • 3 tablespoons flour
  • 1/2 cup chicken broth
  • 1 1/2 cups milk (skim or full cream)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chicken or vegetable stock/Bouillon powder
  • 1/4 cup parmesan cheese, fresh grated
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley (optional, for garnish)

Other Ingredients

  • 2 cups fresh broccoli florets (uncooked)
  • 4 cups cooked or rotisserie chicken, shredded or diced
  • 2 cups diced ham
  • 2 cups Swiss cheese, shredded
  • 1/4 cup Parmesan cheese, fresh grated
  • 1 cup Panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Make the Dijon Cream Sauce: Melt 3 tablespoons butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Lower heat and whisk in 3 tablespoons flour, cooking for 1 minute to form a roux.
  2. Add Liquids: Gradually whisk in chicken broth and milk until smooth. Stir in Dijon mustard, bouillon powder, and 1/4 cup parmesan cheese. Cook, whisking constantly for 2-3 minutes until thickened. If needed, add extra milk 1-2 tablespoons at a time for preferred consistency. Season with salt and pepper. Optionally stir in fresh parsley.
  3. Prepare Broccoli: Meanwhile, bring salted water to boil, add broccoli florets and blanch for 2-3 minutes until crisp-tender. Drain and set aside.
  4. Preheat Oven: Set oven to 400°F (200°C) to prepare for baking the casserole.
  5. Assemble Casserole: In a casserole dish, layer the chicken evenly at the bottom, followed by broccoli florets and diced ham. Pour the prepared cream sauce evenly over the layered ingredients. Top with shredded Swiss cheese and sprinkle with additional parmesan cheese.
  6. Prepare Breadcrumb Topping: Mix panko breadcrumbs with melted butter until evenly coated. Sprinkle this mixture across the top of the casserole for a crunchy topping.
  7. Bake: Place the casserole in the oven and bake for 30 minutes or until the top is golden brown and the casserole is bubbling hot.

Notes

  • Use cooked or rotisserie chicken for ease and depth of flavor.
  • Broccoli can be substituted with cauliflower or green beans based on preference.
  • For a creamier sauce, use full cream milk instead of skim.
  • The casserole can be prepared ahead and refrigerated before baking.
  • Add extra Dijon mustard for a more pronounced tangy flavor.
  • Panko breadcrumbs can be replaced with crushed crackers for a different texture.
