Description

This Chicken Avocado Melt Sandwich is a delicious, satisfying meal combining tender, seasoned chicken breasts with creamy avocado, melted cheese, and fresh vegetables, all grilled to golden perfection on your choice of bread. Perfect for a hearty lunch or light dinner, it blends creamy, savory, and tangy flavors for a delightful sandwich experience.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Spreads

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side until fully cooked and no longer pink in the center. Remove from skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and arrange the cheese slices. Set aside for assembling.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread. This adds flavor and prevents sogginess.
  4. Assemble the Sandwiches: On two slices of prepared bread, layer the sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Finish by topping each with remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place sandwiches in the pan and cook for 3-4 minutes per side, until bread is golden brown and cheese melts. Press down gently with a spatula to ensure even melting.
  6. Serve: Remove sandwiches from the skillet, let cool for a minute, then slice in half and serve warm for maximum enjoyment.

Notes

  • For crispy edges, use sourdough or ciabatta bread.
  • You can swap out Dijon mustard for spicy brown mustard for extra kick.
  • Make sure chicken is cooked through to a minimum internal temperature of 165°F (74°C).
  • Use ripe avocado for creamy texture and best flavor.
  • To make it lower fat, substitute mayonnaise with Greek yogurt or a light spread.
  • Leftover chicken from a previous meal can be used to save time.
