Ingredients
Scale
Lasagna Noodles
- 12 lasagna noodles
Filling
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Sauce and Toppings
- 3 cups Alfredo sauce
- 1 cup shredded mozzarella cheese (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Noodles: Boil the lasagna noodles in salted water until they are al dente, usually about 8-10 minutes. Drain them carefully and lay them flat on a clean kitchen towel to prevent sticking while you prepare the filling.
- Mix the Filling: In a large mixing bowl, combine the shredded cooked chicken, ricotta cheese, 1 cup shredded mozzarella, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir well until all ingredients are evenly incorporated.
- Assemble the Rolls: Spread a thin layer of Alfredo sauce on the bottom of a baking dish to prevent sticking. Take one lasagna noodle and spread about 1/4 cup of the chicken and cheese filling evenly over it, then carefully roll the noodle up and place it seam-side down in the baking dish. Repeat this process with all noodles and filling.
- Top with Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the assembled lasagna rolls. Sprinkle the remaining 1 cup of shredded mozzarella cheese on top to create a golden, cheesy crust when baked.
- Bake: Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake the rolls for 25 minutes. Remove the foil and continue baking for an additional 15-20 minutes until the cheese on top is bubbly and slightly golden.
- Garnish and Serve: Allow the lasagna rolls to cool for a few minutes after baking. Garnish with freshly chopped parsley for a pop of color and fresh flavor before serving warm.
Notes
- Use freshly cooked or leftover rotisserie chicken for convenience and enhanced flavor.
- For a lighter version, substitute part of the ricotta with low-fat cottage cheese.
- You can prepare the rolls in advance and refrigerate them before baking; just add extra baking time if baking straight from the fridge.
- Substitute Alfredo sauce with homemade or store-bought versions based on preference.
- For a gluten-free option, use gluten-free lasagna noodles.
- To add a vegetable boost, consider mixing chopped spinach or mushrooms into the filling.
