For the Bread:
- 3 cups flour
- 2 cups sugar
- 3/4 cup cooking oil
- 1 tbsp zest of one orange (Naval orange)
- 4 oz fresh orange juice or 4 tsp orange extract
- 3 cups minced fresh zucchini, drained
- 1 tsp baking powder
- 1 tsp baking soda
- 3 eggs
- 1 tbsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
Instructions
- Preheat Oven: Preheat oven to 350F and position rack in the middle.
- Prepare Zucchini: Quarter zucchinis and mince in a food processor. Alternatively, use a cheese grater.
- Prepare Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, cinnamon, cloves, and salt.
- Mix Wet Ingredients: In a separate bowl, mix sugar, oil, orange zest, orange juice, and eggs. Gradually add in the flour mixture, then stir in the minced zucchini.
- Bake: Grease two loaf pans, divide the batter between them, and bake at 350F for 50-60 minutes. Check for doneness with a toothpick. Let cool before slicing and serving.
