Ingredients
Scale
Chicken Mixture
- 2 cups cooked, shredded chicken (rotisserie or homemade)
- 1 cup BBQ sauce (your favorite brand or flavor)
- 1 cup shredded cheddar cheese
- 1 cup frozen corn
- 1/2 cup diced red onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Topping
- 1 bag frozen tater tots (32-ounce bag)
Garnish
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the casserole.
- Prepare the chicken: Shred the cooked chicken into bite-sized pieces for easy mixing and even baking.
- Mix the chicken and BBQ sauce: In a large mixing bowl, combine the shredded chicken with the BBQ sauce, stirring well to coat all pieces evenly.
- Add remaining ingredients: Stir in the shredded cheddar cheese, frozen corn, diced red onion, garlic powder, onion powder, and black pepper until everything is well combined.
- Assemble the casserole: Grease a 9×13-inch baking dish, then spread the chicken mixture evenly across the bottom. Arrange a single layer of frozen tater tots on top of the mixture.
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the tater tots are golden brown and crispy on the outside.
- Cool and garnish: Remove from the oven and allow the casserole to cool for about 5 minutes before sprinkling chopped fresh parsley on top and serving.
Notes
- Use rotisserie chicken for a time-saving shortcut or cook chicken breasts or thighs yourself.
- Adjust the amount of BBQ sauce to your taste preference; you can add a little extra for saucier casserole.
- Feel free to swap cheddar for other melty cheeses like Monterey Jack or mozzarella.
- For extra crispiness, you can broil the casserole for 2-3 minutes at the end of baking, watching closely.
- Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
