  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare the bang bang sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Mix well until smooth and set aside to allow the flavors to meld.
  2. Cook the chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 5–6 minutes until browned on the outside and cooked through. Remove the chicken from the pan and set aside.
  3. Scramble the eggs: In the same pan, add the beaten eggs and cook, stirring gently, until just set. Avoid overcooking to keep them tender. Remove the eggs from the pan and set aside with the chicken.
  4. Sauté the vegetables: Add a little more oil if needed, then sauté diced carrots and minced garlic in the pan for 2–3 minutes until the carrots begin to soften. Add green peas and cook for another minute until heated through.
  5. Cook the rice: Add the cold, cooked rice to the pan with the vegetables. Stir-fry on high heat for 3–4 minutes, breaking up any clumps and allowing the rice to slightly crisp up on the bottom for added texture.
  6. Combine chicken, eggs, and rice: Return the cooked chicken and scrambled eggs to the pan. Stir thoroughly to combine all ingredients evenly. Pour in 2 to 3 tablespoons of soy sauce and mix well for balanced seasoning.
  7. Add the bang bang sauce: Pour the prepared bang bang sauce over the rice mixture. Stir continuously until all the rice and other ingredients are well coated and warmed through, ensuring the spicy and creamy flavors are evenly distributed.
  8. Garnish and serve: Remove from heat and garnish with sliced green onions. Serve the Bang Bang Fried Rice hot as a delicious meal on its own or paired with other Asian-inspired sides.

  • Use day-old rice to prevent the fried rice from becoming mushy and to help it crisp nicely in the pan.
