Cookies

  • 184 grams (13 tablespoons) unsalted butter, browned to 150 grams (approximately 3/4 cup)* see notes
  • 100 grams (½ cup) dark brown sugar
  • 100 grams (½ cup) granulated sugar
  • 2 teaspoons vanilla bean paste or extract
  • 1 egg, room temperature
  • 1 egg yolk, room temperature
  • 250 grams (2 cups) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 5 grams (2 teaspoons) cornstarch

Coating

  • 66 grams (1/3 cup) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Caramelize Apples: Peel and dice apples, toss with brown sugar, cinnamon, salt, and lemon juice. Cook until caramelized, then chill.
  2. Brown Butter: Melt butter until golden brown, cool in fridge.
  3. Prepare Dough: Whisk dry ingredients; separately whisk brown butter, sugars, vanilla, eggs. Fold in apples, then mix in dry ingredients. Chill dough.
  4. Bake Cookies: Preheat oven. Roll dough in cinnamon sugar, place on baking sheet. Bake until golden.
