Instructions

  1. Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper to prevent sticking. Set aside.
  2. Mix Cinnamon Sugar: In a small bowl, whisk together the brown sugar and ground cinnamon. Set this mixture aside as it will be used for layering and topping the bread.
  3. Combine Eggs and Granulated Sugar: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is well combined and slightly frothy to incorporate air for a tender bread.
  4. Add Butter and Vanilla: Stir in the melted butter and vanilla extract to the egg mixture until the batter is smooth and uniform in texture.
  5. Add Dry Ingredients: Add the flour, baking powder, baking soda, and salt to the wet ingredients. Mix gently until just combined; the batter will be thick. Avoid overmixing to keep the bread tender.
