  • 2 tablespoons powdered sweetener (optional)
  • ¼ teaspoon cream of tartar
  • ½ teaspoon vanilla extract

Additional:

  • ¼ cup fresh blueberries

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat Egg Whites: In a clean bowl, beat the egg whites and cream of tartar together until stiff peaks form.
  3. Mix Yolk Mixture: In another bowl, mix the egg yolks, cottage cheese, sweetener, and vanilla extract until smooth.
  4. Combine Mixtures: Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the whites.
  5. Add Blueberries: Carefully fold in the blueberries.
  6. Bake: Spoon the batter onto the prepared baking sheet, making six even rounds. Bake for 25–30 minutes or until golden and firm to the touch.
