Egg Mixture:
- 4 large eggs, separated
Cottage Cheese Mixture:
- ½ cup cottage cheese
- 2 tablespoons powdered sweetener (optional)
- ¼ teaspoon cream of tartar
- ½ teaspoon vanilla extract

- ¼ cup fresh blueberries
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Beat Egg Whites: In a clean bowl, beat the egg whites and cream of tartar together until stiff peaks form.
- Mix Yolk Mixture: In another bowl, mix the egg yolks, cottage cheese, sweetener, and vanilla extract until smooth.
- Combine Mixtures: Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the whites.
- Add Blueberries: Carefully fold in the blueberries.
- Bake: Spoon the batter onto the prepared baking sheet, making six even rounds. Bake for 25–30 minutes or until golden and firm to the touch.
- Cool and Serve: Allow to cool slightly before serving.
